The bacteria fermenting your homemade sauerkraut or kimchi are the same ones scientists are struggling to turn into reliable gut health supplements, so 'probiotic' on a label means less certainty than you'd think.

Lactiplantibacillus plantarum is a bacterium that shows up naturally on fermenting vegetables and in your gut, and it's remarkably good at breaking down plant fiber and talking to your immune system. But different strains of this same species can act completely differently, some calming inflammation and others triggering it, which is why probiotic products don't always work the way you'd hope.
