Huangjing is the dried root of Solomon's seal, a plant long used in traditional Chinese medicine, and it's prepared two ways: raw or soaked and steamed in wine. Researchers used a machine that measures color precisely, alongside chemical tests, to find out exactly how wine processing changes the root's makeup. It turns out the darker color you see after processing isn't just cosmetic: it lines up with real drops in natural sugars and increases in other compounds, so color could become a quick, cheap way to check if an herbal product was processed correctly.
Key Findings
Wine-processed rhizomes darkened in color while polysaccharide content decreased and extractum (extractable solids) content increased compared to raw rhizomes.
HPLC analysis identified 18 chromatographic peaks; from raw to processed samples, 7 peaks increased, 1 decreased, 7 new components appeared, and 3 disappeared, with 5 peaks (including 5-HMF, DDMP, and polygonatine A) showing the strongest discriminating power (VIP > 1.0).
Correlation and regression analysis showed several key components (Peaks 7, 8, 10, 16, 17, plus polysaccharides and extractum) could be predicted directly from color measurements, suggesting chromaticity as a fast quality-control tool.
