The lentils in your soup pot carry hidden starch structures that act like different keys for different gut bacteria, meaning how lentils are cooked and processed could someday be tuned to nourish specific parts of your microbiome.
Lentils have several forms of starch that resist digestion in your small intestine and travel down to feed the bacteria in your gut instead. This study found that each form has a distinct shape and crystal structure, and gut bacteria break them down in different ways, producing different helpful acids and favoring different bacterial species. That means the type of resistant starch in your food, not just the amount, shapes what happens in your gut.
Key Findings
RS2 produced the most acetate and propionate, while RS3 produced the most butyrate and valerate, showing starch structure directs which short-chain fatty acids form.
RS5 (V-type crystal) transformed into an A-type crystal structure during fermentation, while RS3 (B-type) resisted structural breakdown and showed only minor surface wear.
Different starch types selectively fed different gut bacteria: RS2 and RS4 boosted Ruminococcus, RS3 enriched Roseburia, and RS5 strongly stimulated Bifidobacterium and Megamonas.
