The mold that turns your stored grapes soft and fuzzy can potentially be stopped with a gas treatment instead of chemical fungicides, meaning cleaner fruit on your table and less food waste in the supply chain.
Table grapes often rot in storage because of a fungus that causes blue mold. Researchers discovered that treating the fungus with ozone gas overloads its cells with reactive oxygen molecules, which then wrecks its internal energy factories (mitochondria) and triggers a self-destruct process, essentially killing the mold from the inside out. This could give grape growers and shippers a non-chemical tool to keep fruit fresh during transport and storage.
