Neltuma trees, close cousins of mesquite, thrive in some of the driest, harshest land in South America and produce seeds full of a special fiber called galactomannan. Researchers reviewed the best ways to pull this fiber out of the seeds and found early evidence it could help with blood sugar control, cholesterol, and gut health, though real digestion and human studies are still needed. It's a case of a rugged, underused desert plant potentially becoming tomorrow's health food ingredient.
