Nano-sized carbon specks could keep produce fresh longer

PubMed · 2026-08-20

Tiny carbon particles called carbon dots can fight the bacteria and spoilage that ruin fruits and vegetables after harvest, offering a cleaner alternative to chemical preservatives. Scientists are now building them into food wraps, coatings, and freshness labels to keep produce edible longer.

1

Carbon dots fight spoilage microbes through three mechanisms: physically disrupting cell membranes, generating reactive oxygen species, and interfering with microbial metabolism

2

Beyond antimicrobial action, carbon dots show antioxidant, UV-blocking, and ethylene-scavenging properties, plus the ability to act as visual freshness indicators

3

Current applications include packaging films, edible coatings, preservative additives, and indicator labels, but large-scale production, long-term safety, and environmental impact remain unresolved challenges
