The rice feeding half the planet is grown in fields that increasingly hit damaging heat spikes during flowering, and this membrane trick could be the difference between a full harvest and a failed one.

Every plant cell is wrapped in a thin membrane made of fat molecules, and those fats are normally arranged asymmetrically, with different types on the inside versus outside. Scientists found that when rice plants get hit with sudden heat, they can rapidly flip these fat molecules between the two membrane layers, which helps the membrane stay stable and functional instead of breaking down. This flipping mechanism happens fast enough to act as a real-time defense against heat damage.
