Mixing elephant garlic with regular garlic changes flavor and nutrition

Food Science

If you grow both elephant garlic and regular garlic in your kitchen bed, this shows the ratio you blend them in actually shifts the taste, texture, and antioxidant punch of your homemade garlic paste.

Elephant garlic is milder and bigger than regular garlic, so scientists tried mixing it with two garlic varieties in different proportions to make paste. They found that some blends packed more protein, others had more antioxidants, and tasters picked up different aroma and flavor depending on the mix, meaning there's no single perfect ratio, just tradeoffs depending on what you want.

Key Findings

1

A 25:75 elephant garlic to Taiwan 5 garlic blend had the highest protein content at 4.37%

2

A 50:50 elephant garlic to Taiwan 5 blend showed the strongest antioxidant capacity (41.71 µmol TE/100g) with a significant positive synergy effect (β12=19.0, p=0.019) not seen in the elephant garlic + Roselló 1 combination

3

Sensory testing showed a 75:25 elephant garlic to Taiwan 5 blend scored highest for aroma (3.57), while 75:25 elephant-Roselló and 25:75 elephant-Taiwan blends scored highest for flavor (3.45 and 3.48)

chevron_right Technical Summary

Researchers blended elephant garlic with two regular garlic varieties to make garlic paste, finding that the mix ratio changes protein content, antioxidant power, and taste, but no single blend wins on every measure.
