Wild versus store-bought yeast mostly matters early in winemaking

If you've ever wondered why a natural or 'wild fermented' wine tastes different from a standard one, this study shows the real divergence happens in the first days of fermentation, when wild microbes explore sugar transport, sulfur handling, and aroma-building pathways that commercial yeast strains skip in favor of playing it safe.
When grapes turn into wine, a whole community of yeasts and bacteria works together, not just a single yeast species. This study watched that community change over time in two approaches: one where winemakers add a reliable commercial yeast, and one where they let whatever yeasts and bacteria are naturally on the grapes take over. Both approaches end up in a similar place with mostly the same yeast dominating, but the wild version spends its early days building different flavor-related chemistry before the two paths merge.
