Quinoa seedlings switch on antioxidant defenses the moment light hits

If you've ever grown quinoa microgreens on a windowsill, this explains why that first burst of light matters so much: it triggers the plant's chemistry to start building the antioxidant compounds you're growing them for in the first place.

When a quinoa seedling pushes up through the soil and sees light for the first time, it kicks off a rapid chemical response, activating genes that build flavonoids, the protective plant compounds linked to health benefits in humans. Researchers found two proteins, CqbZIP55 and CqPIF3, work together like a tag team to turn on the key gene for this process. Interestingly, a compound called quercetin, one of the flavonoids being made, seems to loop back and boost the whole system further.
