The tomato that wilts in a heat wave or the pepper that struggles after a salty watering has an internal cleanup crew deciding which stress-response proteins to keep and which to break down, and scientists are mapping how to tune that system for hardier plants.

Inside every plant cell, there's a quality-control system that tags worn-out or unneeded proteins so they can be broken down and recycled. This review looks at one family of the tagging tools, called PUB proteins, and shows how they help plants respond to drought, extreme temperatures, salty soil, and heavy metal contamination by controlling a key stress hormone called ABA. Scientists think tweaking these tagging proteins could be a path to breeding crops that hold up better under climate stress.
