The next bottle of sunflower oil on your shelf owes its consistent taste and shelf life to genetic traits that researchers just linked to specific DNA regions, some of which only kick in under heat stress like a hot Georgia summer.
Sunflower seeds make oil out of a mix of fatty acids, and that mix determines how healthy and stable the oil is. Researchers grew nearly 300 different sunflower varieties in eight different places around the world and discovered that some plants keep making the same oil blend no matter the weather, while others change depending on conditions like heat. They pinned down over 140 candidate genes behind this, including a chunk of flipped DNA on one chromosome that seems to help oil composition stay steady in hot climates.
