Salty water shrinks tomato plants but fights off disease and boosts flavor

If you've ever wondered why tomatoes grown near the coast or with brackish well water sometimes taste sweeter despite looking stressed, this study shows the salt is rewiring the plant's priorities, trading pathogen defense for better fruit chemistry.
Researchers watered tomato plants with increasingly salty water and found something surprising: the saltier the water, the less bacterial spot disease showed up on the plants, even though the plants grew smaller overall. It turns out the salt makes the plant close its pores and slow down, which accidentally makes it a worse target for the bacteria, while also concentrating sugars in the fruit for better taste. The plant's genes show it's essentially choosing to cope with salt stress instead of fighting off the infection.
