If you've ever wondered why some corn struggles after a late frost while other stalks push through fine, this study shows the toughest variety also loads up on more iron, zinc, and potassium, meaning cold tolerance and nutrition can go hand in hand.

Researchers grew three types of corn from a cold mountain region and studied their chemistry to see what makes some handle cold snaps better than others. The cold-tough variety, called KG-3, turned out to have higher levels of iron, zinc, and potassium plus a unique mix of protective plant compounds, while the cold-sensitive varieties leaned on simpler sugars and fats instead. The team also found that soaking seeds in a mix of potassium nitrate and hydrogen peroxide before planting boosted germination to 100 percent, especially for the less cold-hardy varieties.
