When wheat gets milled into white flour, the nutrient-rich germ part is usually removed and thrown away. Scientists reviewing dozens of studies found that this leftover germ is loaded with easy-to-digest protein and small protein fragments called peptides that seem to fight inflammation, help control blood pressure, and even talk to the gut-brain connection. The catch is that turning this byproduct into food ingredients still faces processing challenges before it shows up widely on store shelves.
